    • But as they grow they fundamentally become optimized and hollowed out.
    • A random example.
    • The first Five Guys was in my home town.
    • They used to pour in heaping amounts of extra fries into the bag.
      • An authentic gesture of generosity.
    • Now, Five Guys is a massive national chain.
      • They still give you extra fries, but they measure out the extra in a calibrated tin before pouring it in.
    • Same gesture, but coming from a very different place.
    • Presumably some beancounter could discover "if we reduced the size of the tin by 10% no one will notice and we'll save $10M a year nationally!"
