Aficionados can distinguish small quality differences.

The same is true for coffee and LLM models.

They have enough experience with the various options and calibrated taste to be able to distinguish subtle differences and have informed preferences.

But the vast majority of people will think all of the options taste the same.

That means if your thing has a subtly better quality than the default option that can only be discerned by aficionados, you have a low ceiling; most people just won't invest enough time to care.
